We’ve all been there. You’re knee deep into a recipe only to realize you forgot to pick up a necessary ingredient: buttermilk. Don’t panic, making buttermilk from sratch only takes minutes.
I generally shy way from ingredient substitutions when it comes to baking as sometimes they can definitely affect the finished product. However, I’ve used this buttermilk substitute countless times in various recipes without any issues.
Buttermilk is definitely an ingredient you don’t want to omit. The acidity of the buttermilk reacts with baking powder or baking soda leaving your baked goods with a delicious and light texture. Buttermilk can be used in biscuits, cakes, pancakes among others.
HOW TO SUBSTITUTE BUTTERMILK IN BAKING
To make a buttermilk substitute, all you need is milk and white vinegar or lemon juice.
Measure one tablespoon of white vinegar or lemon juice and add it to a cup of milk. Stir the mixture together and let it sit for 5 minutes.
Once the milk and vinegar or lemon juice mixture has rested for 5 minutes, the milk will have thickened and curdled slightly. You can now use your buttermilk substitute 1 for 1 in your favourite baking recipes. If your recipe calls for 1 cup of buttermilk, use 1 cup of buttermilk substitute and so on.
- 1 cup milk
- 1 tbsp white vinegar or lemon juice
- Measure 1 tablespoon of white vinegar or lemon juice into a measuring cup.
- Add in 1 cup of milk.
- Stir the mixture together and let it sit for 5 minutes.
