Cardamon and Lemon Mandazi

Mandazi is a popular snack in Kenya that originated from the Swahili Coast. I’ll be showing you how to make a dairy free and egg free version. Making mandazi is always so fun and it never ceases to amaze me how good they taste straight from the deep fryer.

They have the an amazing balance of flavour, the cardamon and lemon really complement each other. Let’s not even get started on how soft and airy they are.

This mandazi recipe is the perfect snack to pair with your cup of tea or coffee.

WHAT YOU’LL NEED TO MAKE CARDAMON AND LEMON MANDAZI

 

HOW TO MAKE CARDAMON AND LEMON MANDAZI

1. In a large bowl, sift in the measured flour. It is important to sift your flour as it breaks up any lumps and contributes to an end product with great texture.

2. Add in the margarine to the flour and rub it in until you end up with a crumbly mixture. This step right here is very critical. The rubbing in method greatly contributes to a tender crumb which is what we’re going for in this case.

3. Create a well in the center and add sugar, salt, ground cardamon and grated lemon zest.

4. Add the warm water and mix with a wooden spoon as you dissolve the sugar. Start folding in the flour until well combined.

5. Dust a clean surface with flour and proceed to knead the dough with your hands until it comes together. This will take around 15 minutes.

6. Place the dough into a greased bowl and allow it to rest for 45 minutes.

7. After the dough has rested, divide it into 10 equal sections.

Roll each section into a circular shape and cut into quarters.

8. Deep fry in hot oil until golden brown on all sides.

Drain onto a paper towel and serve them warm

TIPS FOR THIS RECIPE

  • Measure your flour correctly. Adding too much flour to the recipe is a common mistake.
  • Be sure not to skip the rubbing in of the margarine into the flour. This is secret ingredient to getting that dreamy mandazi texture.
  • This recipe takes up flavour very well making it perfect for customization. You could add in your preferred flavouring or spices. My personal suggestions include; vanilla extract, nutmeg or cinnamon.
