Banana Puffs

These golden, sweet and crunchy banana puffs are a delicious and great way of using up overripe bananas.

WHAT YOU’LL NEED TO MAKE BANANA PUFFS

HOW TO MAKE BANANA PUFFS

1. Sift together the flour, maize meal, baking powder and sugar.

2. Make a well in the center and mix in the egg and milk until combined to form a thick batter.

3. Peel, mash the bananas with a fork and mix them with the batter. Don’t worry if there are some banana chunks which aren’t fully mashed, they add to the texture of the puffs.

4. Heat the oil and fry spoonfuls of the mixture in hot oil till golden brown in colour. This will take you around 4 minutes.

5. Drain on a paper towel and serve.

TIPS FOR THIS RECIPE

  • Feel free to throw in some spices to the batter. My top recommendations include, cinnamon and nutmeg.

Ingredients

  • 100 g all-purpose flour
  • 50 g maize flour
  • 75 g granulated sugar
  • 1 egg
  • 1 tsp baking powder
  • 100 g milk
  • 2 medium ripe bananas
  • oil for frying

  • Make a well in the center and mix in the egg and enough milk to form a thick batter.
  • Peel, mash the bananas and mix them with the batter.
  • Heat the oil and fry spoonfuls of the mixture in hot oil till golden brown in colour.
  • Drain on a paper towel and serve.
