  • 120 g all purpose flour
  • 3 g baking soda
  • 112 g salted butter
  • 65 g granulated sugar
  • 140 g brown sugar
  • 5 ml vanilla extract
  • 1 egg
  • 135 g rolled oats

  • In a bowl, whisk together the flour and baking soda and set aside.
  • Combine the butter and the sugars, beat on medium speed until it's fluffy.
  • Add the vanilla and eggs. Beat on low speed until well mixed.
  • Add the flour mixture and mix until almost combined.
  • Stir in the oats with a spatula.
  • Pre heat the oven to 190˚ C.
  • Scoop 1 heaped tablespoon of the dough onto a baking tray lined with parchment paper. The dough should be 2 inches apart.
  • Bake until cookies are golden brown around the edges, but soft in the center; 10-12 minutes.
  • Remove from oven and let them cool on the baking tray for 2-5 minutes.

  • Toasted walnuts or chocolate chips make an excellent addition to this cookie. You could add either 1/2 cup of chopped nuts or 1/2 cup chocolate chips/chunks.
  • Measure the flour correctly. Adding too much flour will not yield a good cookie structure.
  • The cookies are done when the edges start to brown and the centers aren't fully set.
