In a bowl, whisk together the flour and baking soda and set aside.
Combine the butter and the sugars, beat on medium speed until it's fluffy.
Add the vanilla and eggs. Beat on low speed until well mixed.
Add the flour mixture and mix until almost combined.
Stir in the oats with a spatula.
Pre heat the oven to 190˚ C.
Scoop 1 heaped tablespoon of the dough onto a baking tray lined with parchment paper. The dough should be 2 inches apart.
Bake until cookies are golden brown around the edges, but soft in the center; 10-12 minutes.
Remove from oven and let them cool on the baking tray for 2-5 minutes.
