These golden, sweet and crunchy banana puffs are a delicious and great way of using up overripe bananas.

  • 100 g all-purpose flour
  • 50 g maize flour
  • 75 g granulated sugar
  • 1 egg
  • 1 tsp baking powder
  • 100 g milk
  • 2 medium ripe bananas
  • oil for frying


  • Sift together the flour, maize flour, baking powder and sugar.
  • Make a well in the center and mix in the egg and enough milk to form a thick batter.
  • Peel, mash the bananas and mix them with the batter.
  • Heat the oil and fry spoonfuls of the mixture in hot oil till golden brown in colour.
  • Drain on a paper towel and serve.


  • Feel free to throw in some spices to the batter. My top recommendations include cinnamon and nutmeg.
