These golden, sweet and crunchy banana puffs are a delicious and great way of using up overripe bananas.
Servings 5 people
- 100 g all-purpose flour
- 50 g maize flour
- 75 g granulated sugar
- 1 egg
- 1 tsp baking powder
- 100 g milk
- 2 medium ripe bananas
- oil for frying
Sift together the flour, maize flour, baking powder and sugar.
Make a well in the center and mix in the egg and enough milk to form a thick batter.
Peel, mash the bananas and mix them with the batter.
Heat the oil and fry spoonfuls of the mixture in hot oil till golden brown in colour.
Drain on a paper towel and serve.
- Feel free to throw in some spices to the batter. My top recommendations include cinnamon and nutmeg.
